I think you can still get rid of everything. During the replay, just keep hitting the HUD key (whichever you mapped to it) until it all disappears. I think it takes a few times to change it to nothing.

I will give that a go as i have not mapped any key to the HUD strange how im sure it used to work before but in saying that with the latest patch my brother in law was having a go at Macau last night and he is not very good and kept crashing but sometimes he would crash and get the message that the car was not repariable and yet he was still driving it LOL.
