It's found in the Logitech Profiler (under Windows - not in RACE). You should have an icon on your desktop, bottom menu bar.
If you want to set it differently for different games (I do) then here's how: Make sure you set up a profile for RACE first. Then select it. Click Edit and Specific Game Settings. Make sure you have ticked Use Special Steering Wheel Settings. Adjust Degrees of Rotation. Hope this is clear enough. If not, let me know and I'll try some screenshots.

You can set it in the game in the car setup, it is on the last overall page at the bottom around, it is the degree how much your front wheel of the car is going to turn at full steering wheel rotation.

I use either 270 or 540 (w/ max steering lock) for Race depending on whether I'm intending to use cockpit view, with the exception of the Caterhams in which case I turn the in-game wheel off and use 792 degrees with 32-38 degrees lock (real world values). For everything else, I use 540-620 as 'standard', occasionally 720 or 900 depending on what I'm driving.
